The Human Nutrition Minor examines the effects of diet and food on health and disease in human individuals and at the population level. The study of nutrition includes investigations of cellular metabolism and physiological responses to nutrients, the impact of diet on chronic disease risk, and examinations of food choices in populations. As such, the study of nutrition is multidisciplinary, but at the core requires a fundamental understanding of biochemistry and physiology. The minor is designed to provide these fundamentals followed by the application of the basic concepts of nutrition to various aspects of health and disease.
